Green String Beans (Loubia)

As a kid my mom would sit me down with a bag of these beans as I watched TV. I would snap the ends off each bean and carefully cut them into three equal parts. I’ve been asked to relive my childhood and share more Lebanese dishes so I brought my Lebanese mom in to show me how to make her oh so yummy string beans aka Loubia. These über healthy beans are a snap (no pun intended, I promise) to make and can be served either as side dish to accompany fish or meat or as main meal eaten with a green salad.

Ingredients:
2 lbs fresh green beans
2 medium onions, (2 cups chopped)
1/4 cup Vegetable Oil (I use Camelina Oil by Three Brothers)
1 cup frozen lima beans
1/2 tsp sea salt
1/2 cup water

Instructions:
1. Cut tips the ends of each green bean and then cut into axp 1.5 inch pieces.
2. Rinse the green beans in cold water. Set aside.
3. On medium-high, heat oil in a large pot.
4. Add onions and cook until brown, stirring constantly. (axp 10 mins)
5. Add beans, salt and water. Stir to combine.
6. Lower heat to medium and cover pot with lid.
7. Stir 2-3 times throughout the cooking process.
8. Cook beans for about 25-30 minutes or until soft.
9. Serve hot or at room temperature with pita bread.
